Luiz Gustavo de Matos holds a Bachelor’s degree in Biological Sciences from the Pontifical Catholic University of Campinas (2019) and a master’s degree in food science from the University of Campinas (UNICAMP), where he developed the project “Bacterial diversity of dry-aged and wet-aged meats using next-generation sequencing of the 16S rRNA gene” (2021).
He completed his PhD in Veterinary and Animal Science at the University of Milan (2025), conducting two research projects: (a) “Reduction of methane (CH₄) production in ruminants using microencapsulated additives”, and (b) “Immunomodulatory effect of plasma extracellular vesicles from heat-stressed dairy cows on bovine immune cells.”
He is currently working as a postdoctoral researcher, investigating how extracellular vesicles from heat-stressed cows may affect the bovine immune system. Recently, he was awarded a position through Brazil’s “Brain Gain” program (an initiative to support the return of researchers from abroad) at the University of Campinas (UNICAMP), where he will lead a project focused on bacterial extracellular vesicles and their implications for food quality.
